The Flomade Table Acquires Cacciatore Catering, Inc.

The Flomade Table, a private chef services company, recently purchased Cacciatore Catering in the Gainesville, Florida market, an established catering and event company founded by the Cacciatore family in 2001. 

GAINESVILLE, FL. [Feb 26, 2024] -- The Flomade Table, a catering and private dining company based in Jacksonville, has recently acquired the locally acclaimed Cacciatore Catering. As The Flomade Table continues its expansion in the catering industry, the esteemed culinary offerings and exceptional service of Cacciatore Catering will enrich and broaden its diverse repertoire.

Cacciatore Catering was founded in 2001 by Dean and Loraine Cacciatore with the goal of providing outstanding, award-winning food while becoming the "go-to" caterer in Gainesville, Florida. Since being founded, Cacciatore has surpassed what the community expected and has grown to include a kitchen team and staff of over 50 individuals. Cacciatore boasts multiple culinary awards over the past 2 decades, most recently the Fresh from Florida award in 2021. The company's most prized account has been working alongside the University of Florida and providing exceptional food & event services for the esteemed offices at UF. Trina Dockery, Head Chef and Co-Owner of The Flomade Table is excited to continue this legacy. Chef Dockery is classically trained at Auguste Escoffier School of Culinary Arts. Known for infusing classical techniques with innovative twists, Trina's creative approach to cuisine aligns seamlessly with the culinary excellence that Cacciatore Catering has championed for over two decades. The Flomade Table is committed to continuing Cacciatore Catering’s ethos of using fresh and locally sourced ingredients to incorporate a more seasonal approach to the menu. “I am profoundly grateful to have acquired a company with such a long-standing history of excellence in food and service. Head Chef and Owner Dean Cacciatore will aid in the shift to ensure a seamless transition, as well as the renowned staff will stay on. Former Managers Cameron Leonard and Tara Parrish will be stepping up and bringing their invaluable experience and dedication to maintain the exceptional standards synonymous with Cacciatore Catering.

Chef Trina is classically trained at Auguste Escoffier School of Culinary Arts. She combines classical techniques with modern twists and thrives on fusing cuisines to create new dishes. She has a very creative take on food and believes that every recipe is edible art.  Growing up in New Mexico, Trina was exposed to Latin culture and cuisine giving her a natural flair for spice. Having not been impressed by the constraints of the restaurant industry, she chose the path of being a personal chef to share her passion while interacting with those that she serves. Chef Trina abhors strictly following recipes and embraces the “pinch of this and dash of that” mentality.  She believes that food is her love language so if she cares about you, you’re very well fed!

Chef Jenn began her journey into the culinary world out of necessity when she was told  that her then 16  month old daughter had developed type one diabetes.  She knew that to fully understand the effects of food on the human body she needed to educate herself and so received her bachelor's degree in Nutrition. It then became her passion to take traditionally high carb foods that kids crave and create delicious alternatives so that her now 12 year old would never feel like she was missing out.  The outcome is some of the best desserts that you can imagine without the guilt!
